Toffee Oatmeal Cookies

 

1 cup (2 sticks) softened butter

2 cups firmly packed dark brown sugar

2 eggs

1 Tbls vanilla

1 tsp baking soda

1 tsp kosher salt

1 ¾ cup flour

3 cups quick cooking oats

1 cup flaked coconut

1 ¾ cups toffee bits

Preheat oven to 375

Grease, spray with cooking spray baking sheets or line with parchment paper.  The toffee bits will melt during baking and will STICK.

Cream together butter and sugar until light and creamy. Add eggs and vanilla and blend well.  Add baking soda and salt and mix well.  Gradually mix in flour.  Stir in oats, coconut and toffee bits.  Drop by rounded teaspoons onto baking sheet.  Bake 8 to 10 minutes or until edges are lightly browned.
