1 cup (2 sticks) butter softened
¾ cup granulated sugar
¾ cup dark brown sugar
1 egg
2 tsp vanilla
½ tsp baking powder
½ tsp kosher salt
1/3 cup dark cocoa powder
1 Tbls espresso powder
1 ¾ cups flour
¾ cup dried cherries
2 cups dark chocolate chunks
Preheat oven to 350
Cream together butter and sugars until light and fluffy.
Beat in egg and vanilla. Mix in baking powder, salt, cocoa powder, and espresso
powder. Gradually mix in flour. Stir in
cherries and chocolate chunks.
Drop by rounded tablespoons onto baking sheets. Bake 11 to 12 minutes.
