Pineapple and White Chocolate Drops

 

1 cup (2 sticks) butter softened

1 cup granulated sugar

2 eggs

1 tsp vanilla

1 8oz can crushed pineapple in juice NOT syrup

1 tsp baking soda

1 tsp kosher salt

1 cup sliced almonds

1 2/3 cups white chocolate chips

Preheat oven to 350

Cream together sugar and butter until light and creamy.  Add eggs and vanilla blend well. Blend in pineapple and juice.  Mix in baking soda and salt.  Gradually blend in flour.  Stir in almonds and white chips.  Drop by tablespoon full onto baking sheet.  Bake 10 to 12 minutes or until lightly browned around the edges.
