Tinga Chicken Tacos

Tinga (is meat cooked in onions chipotles and adobo)

Ingredients:
2 tbls oil - I like using a smoked chili infused olive oil to add a bit more heat)
2 large boneless skinless chicken breasts
1 medium sweet onion chopped
1 small can red enchilada sauce
2 to 4 chipotle peppers in adobo
8 to 12 tortillas
Optional Toppings:
guacamole or mashed avocado
pineapple salsa
cotija cheese
fresh cilantro

Instructions:
Heat oil in medium sauce pan. Add chicken and onions.Cook, stirring the onions and turning the chicken until the chicken is browned on all sides.  The chicken will not be fully cooked at this point.  Stir in the enchilada sauce and the chipotle peppers.  Cover and simmer until the chicken is cooked through.  Remove from heat and using two forks shred the chicken.
To serve warm tortillas, and top chicken with desired toppings.

Pineapple salsa:
1 can crushed pineapple (in it's own juice) drained
juice of one lime
half small sweet onion finely chopped
salt to taste
diced pickled jalapenos to taste
fresh or dried cilantro
