Egg in a Hole sandwich
Ingredients:
4 slices thick country style bread (we use the Panera country white loaf sliced thick)
2 to 4 Tbs butter
bacon - crispy cooked
2 slices or 1 cup shredded sharp cheddar cheese
2 large tomatoes sliced
1/4 cup pesto
4 large eggs
Instructions:
Cut a 2 inch circle in each slice of bread. Melt butter in skillet and lightly toast both sides of each slice of bread. The bread will continue to toast while the egg cooks. Break an egg into the holes cut in each slice of bread. Season with salt to taste. Cook 2 to 3 minutes, flip bread slices and top with shredded or sliced cheese. Cook until cheese melts and egg is cooked to your liking.
Assemble your sandwich. Layer the bacon, tomato and pesto on the cheese side of the bread. Top with additional bread slice.
