Chocolate peanut butter cream filled cookies


Cookie Ingredients:
1 box devil's food cake mix
1/3 cup oil
2 eggs
1 tsp vanilla
2 Tbs cocoa powder
2 tsp instant espresso
Preheat oven to 325

Instructions:
Place all ingredients in bowl and mix until well combined, then mix on medium an additional 2 minutes.  The batter will be crazy thick.  Using a small scoop place dough balls on a cookie sheet lined with parchment paper.  Gently press dough slightly to flatten just a bit.  Bake 8 minutes, leave on warm cookie sheet at least two minutes before you move them to a cooling rack.  While they cool they will flatten.

Peanut butter filling ingredients:
1/2 block softened cream cheese
1/2 stick butter room temp
3/4 cup smooth peanut butter
2 tsp vanilla
pinch salt
1 1/2 cups powdered sugar

Instructions:
Mix cream cheese, butter, peanut butter, vanilla and salt until smooth and well incorporated.  Slowly mix in powdered sugar until smooth.  Using small cookie scoop place one scoop peanut butter filling on the flat side of one cookie and top with another.  Gently press to spread out the filling.
