Southwest Chicken Soup



If you have a can opener you can make this soup!  Quick and Easy!
1 can diced tomatoes
1 can corn niblets drained
1 can black bean drained and rinsed
1 box (6 cups) chicken broth or stock
Rotisarie chicken shredded skin removed you can also use canned chicken, left over grilled or roasted chicken
¼ tsp ground cumin
¼ tsp ancho chili powder
¼ tsp chipotle powder

Place all items in pot and heat through.
Optional toppings:
Shredded cheddar or jack cheese
Sour cream
Lime juice
Cilantro
Chopped jalapenos
Diced onions
Crushed tortilla chips
