Perfect Buttermilk Biscuits

Preheat oven to 450

2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 Tbls COLD butter
3/4 cup buttermilk

Whisk together flour, baking powder, soda and salt in a medium size bowl. Cut butter into small cubes and using a pastry blender or two forks cut the butter into the flour mixture until the butter is small pea size. Stir in buttermilk just until the mixture is moist and comes together.  Lightly flour a clean surface Place the dough on floured surface and lightly press into a disc around a 1/2 inch thick.  Cut biscuits and place in ungreased baking dish.  Bake until golden brown around 10 to 12 minutes.

***I have noticed at times I need to add a bit more buttermilk to get all the flour moist.  My grandmother used to tell me the amount of liquid needed for different recipes can change depending on the weather.  The more I bake the more that makes sense.
