Spicy Peanut Butter Caramel Popcorn




2 normal size bags microwave popcorn popped
1/2 cup honey
1/3 cup sugar
1/2 cup peanut butter 
1/2 teaspoon hot sauce or more if you like more heat
1/2 cup dry roasted peanuts
1/2 teaspoon cayenne 
salt to taste

Have an oversized mixing bowl ready.
 
Pour the popcorn into the bowl to cool, and attempt to leave any unpopped kernels behind. (Coated with peanut butter caramel, the unpopped kernels are a serious tooth hazard). 
Rough chop the peanuts.  Add the peanuts to the popcorn bowl. We like to toss in some whole peanuts when adding the caramel.
Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for about 2 minutes for a soft caramel, cook longer if you like it less sticky. Reduce heat and add the peanut butter and cayenne. Stir until all the peanut butter is melted, then mix in the hot sauce.
Immediately pour the peanut butter caramel over the popcorn and stir until it's all coated. I have found it easier to pour the caramel in a bit at a time to prevent the peanuts from all going to the bottom and to get a more even coat. Add salt as needed.  Let cool for at least 10 minutes before serving.
