Skillet Peaches



It is peach season here....what to do what to do with all the peaches.  Of course we eat them straight up.  Are you a peel your peach first person or a straight up person?  After dinner last night we were all looking for something a little sweet.  We have peaches but straight up didn't seem too exciting.  So we had "skillet" peaches.  Let me tell you the leftovers are great in the brown bag the next day with some plain Greek yogurt.

Ingredients:
6 peaches pitted (I will let you decide if you want them with or without the peel)
1 tsp. butter flavored olive oil
2 tsp. peach white balsamic
1/4 cup pecans
1/4 cup oats ( I used instant or this time, you can use old fashion if you prefer)

Directions:
Place pecans in dry skillet to toast.  When the pecans are fragrant add the oats to give them a little toast.  Add the peaches, olive oil and balsamic.  Cook on medium heat until the peaches are warm and soft.
