Blueberry Compote Crostini


Ingredients:
1/4 cup Pomegranate Juice
2 cups Blueberries
1 Tablespoon lemon juice
1 Tablespoon Honey
2 Tablespoons Pomegranate Balsamic
1 teaspoon Cinnamon
Directions:
Place pomegranate juice, blueberries, lemon juice, balsamic, honey and cinnamon in a small saucepan. Bring to boil. Reduce heat to low and simmer until fruit is softened and mixture is thick and syrupy, about 10 minutes.  Mixture can be served warm or at room temperature.
Spread toasted baguette slices with softened goat cheese. Top with a teaspoon of fruit mixture. Serve warm or room temperature.
