Quinoa Southwest Style

Ingredients:
1 bell pepper diced  
1 small red onion diced
1 can black beans drained and rinsed 
pickled jalapenos sliced (to taste)
1 can sweet niblets corn drained or leftover grilled corn
1 bunch fresh cilantro
1 large tomato diced seeded and drained   
1 avocado 
¼ cup JalapeƱo olive oil
1 cup quinoa
2 cups water
3 to 4 Tbls. lime juice
1 tsp. ground cumin
1/2 can crushed pineapple in 100% juice
Directions:
Cook Quinoa according to package directions.  I have had the best success using pre rinsed quinoa and starting the cooking process with cold water.
Stir together cooled quinoa, beans, corn, tomatoes, onion, jalapenos and cilantro.  Place avocado, olive oil, lime juice and cumin in food processor.  Blend until smooth, toss salad with avocado mixture.
