We truly enjoy our sausage and peppers why not put it in a
frittata??
Ingredients:
1 pound kielbasa (we prefer the lean lean lean turkey) diced
1 green pepper or red or orange whatever you have on hand
diced
1/2 small sweet onion diced
8 eggs
1/2 cup 2% milk
2 tablespoons basil infused olive oil
kosher salt to taste
Directions:
Preheat oven to 350
Heat oven safe skillet on medium heat add sausage, peppers
and onions. If you are using the lean sausage add 1 tbls. basil olive oil. Cook
just until sausage begins to brown and peppers and onions begin to soften. In medium bowl whisk together eggs and milk
until frothy add kosher salt.
If you are using the full fat sausage you need to remove the
sausage peppers and onions from the skillet and pour off the fat (as much as
possible). If you are using the lean
lean lean sausage you do not need to drain the sausage and peppers or remove
any of the excess fat (see lower fat equals less work, fewer steps....go figure).
Pour frothy eggs into skillet with sausage pepper
mixture. Now you can stir to make sure
the sausage isn't all in one spot for just a few minutes but then stop and
resist resist resist the urge to stir.
This was the hardest step for me.
Once the eggs are beginning to set drizzle the additional oil around the
edge of the eggs. This step seemed a bit
lost on me but trust me the end results make this step necessary. Place in preheated oven for 6 to 8 minutes
until center is set. Remove from oven
and invert on plate or slice straight out of the skillet. Drizzle with additional oil if you like.
