Perfect Early Summer Meal



It is finally starting to warm up!  It seemed winter lasted forever this year.  With the warmer weather we are hitting the grill and loading up on veggies.  Tonight's meal was a perfect example.  We had grilled chicken and zucchini with marinated tomatoes and a cucumber salad.  Yummy!

Grilled Chicken
Ingredients:
2 large bone in skin on chicken breasts (or thighs or legs)
1/2 pint buttermilk
1 tablespoon paprika
1 tablespoon dry mustard

Directions:
Place all ingredients in a shallow dish or large zip lock bag.  I prefer the bag it seems easier to schmooze it all around.  Let marinate for at least 4 hours (I try to throw it all together before heading out to work in the morning).  Heat grill to "around 400" place chicken skin side down and close the lid.  Cook chicken 25 to 30 minutes or until meat thermometer reads 160.  Turn the chicken after 15 minutes. 


Grilled Zucchini
Ingredients:
zucchini sliced into long strips
olive oil
kosher salt

Directions:
Drizzle small amount of oil over zucchini slices and sprinkle with salt.  Place on grill along side chicken for 10 to 15 minutes.

Marinated tomatoes:
Ingredients:
Tomatoes
basil infused olive oil
kosher salt

Directions:
 toss tomatoes with oil and salt


Not your Grandma's cucumber and onion salad
Ingredients:
green pepper sliced
1/2 small sweet onion cut into bite size pieces
1 large cucumber peeled, seeded and sliced
1/4 cup olive oil
1/4 cup white balsamic vinegar
kosher salt to taste

Directions:
Toss together and let sit in fridge to marinate.
