1 cup unsalted butter room temp
1 3/4 cup packed dark brown sugar
2 eggs
3 teaspoons vanilla
1 teaspoon baking soda
1 teaspoon kosher salt (if using table salt reduce to 1/2 tsp)
1 3/4 all purpose flour
3 cups quick cooking oats (not instant)
10 oz. package toffee bits
1 1/4 cup sweetened shredded coconut
Heat oven to 375
Line cookie sheets with parchment paper and lightly spray with cooking spray. If you don't use parchment paper be prepared the toffee bits REALLY stick to the cookie sheet.
Beat butter and sugar until light in color and fluffy. Beat in eggs and vanilla until well blended and fluffy. Beat in baking soda and salt. Add flour and mix until well combined. Stir in oats, toffee bits and coconut.
Drop by dough by rounded teaspoon onto prepared cookie sheets. Bake 8 to 10 minutes or until edges are lightly browned. Cool 1 minute on cookie sheet before moving to cooling rack.
