Peanut Butter Chip Peanut Butter Cookies

 


1 cup (1 stick) butter softened

¾ cup peanut butter

1 cup dark brown sugar firmly packed

1 large egg

2 tsp vanilla

½ tsp baking powder

½ tsp baking soda

½ tsp kosher salt

1 ¼ cup flour

2 cups peanut butter chips

Preheat oven 375

Cream together butters and sugars until light and creamy.  Beat in egg and vanilla until smooth and well combined.  Beat in baking powder, baking soda and salt until combined.  Gradually mix in flour. Stir in peanut butter chips.  Roll dough into golf ball sized balls and pat out to ¼ inch thick disc.  You may need to chill the dough a bit before you form the discs, but don’t leave it in too long the dough gets extremely hard quickly.  Bake 10 to 12 minutes.
