Breakfast Cookies


1 cup (2 sticks) butter softened

1 cup peanut butter

¾ cup firmly packed dark brown sugar

¾ cup granulated sugar

2 eggs

1 tsp baking powder

1 tsp baking soda

1 ½ tsp cinnamon

½ tsp kosher salt

½ tsp nutmeg

¼ tsp ground ginger

¼ tsp ground black cardamon

1 Tbls vanilla

2 cups quick cook oats

1 medium granny smith apple finely grated including all juice

1/3 cup finely grated carrot

1 ¼ cup raisins

1 ½ cup flour

Preheat oven to 350

Place sheets of foil on counter top for cooling cookies.  Cream together sugars and butters until light and creamy. Beat in eggs and vanilla until well combined. Mix in baking powder, baking soda, salt and all spices.  Gradually mix in flour until well blended.  Stir in in oats, raisins, apple and carrots.  Drop by tablespoons on ungreased baking sheet.  Bake 11 to 13 minutes or until just brown around the edges.  Cool cookies on sheets of foil.
