Thai style noodles with spicy sweet peanut sauce


Ingredient:

1/2 pound whole wheat spaghetti noodles or 1 pound soba noodles
2 tablespoon sesame oil
2 tablespoon garlic olive oil
2 tablespoons Harissa olive oil
2 tablespoon soy sauce
2 tablespoons Honey Ginger balsamic
2 tablespoons smooth peanut butter
2 tablespoons lime juice
1 tablespoon grated ginger
¼ cup fresh cilantro
½ cup bell peppers thinly sliced
2 large carrots in thin ribbons or shredded
½ cup thinly sliced snow peas
2 or 3 green onions thinly sliced
½ cup roasted peanuts crushed
Optional add ins: Leftover roasted chicken or Asian flavored grilled tofu recipes below.
Directions:
Prepare all veggies (slice, grate, peel).  Place raw veggies in large mixing bowl.  Cook noodles according to package directions dump hot drained noodles in bowl with veggies.  (this will cook the veggies just enough to keep them crisp but they will lose their raw texture).  Toss noodles and veggies with garlic oil.  This will prevent the noodles from sticking together while they cool.  Whisk together peanut butter, oils, balsamics, ginger, lime juice and soy sauce.  Toss noodles with peanut sauce.  Top with torn cilantro and chopped peanuts. 

Grilled tofu:
Slice extra firm tofu into ½ strips, lie on several layers of paper towels top with several layers of paper towels and press out extra moisture.  Marinate tofu sticks with 2 tablespoons Olive Tree honey ginger balsamic and 2 tablespoons soy sauce.  Grill tofu in hot skillet or grill pan.
