Venetian Cicchetti


 

Ingredients:
1 pint grape or cherry tomatoes
6 cloves of garlic peeled and slightly mashed
3/4 cup Koroneiki Olive Oil
Traditional Balsamic to drizzle
Directions:
Preheat oven to 425 degrees
Place tomatoes and garlic cloves in a single layer in medium baking dish.  Pour olive oil over tomatoes until oil depth is half way up the tomatoes.  Put baking dish in hot oven.  Bake 15 to 20 minutes until tomatoes begin to burst and garlic is beginning to soften.  Remove dish from oven with a potato masher slightly crush tomatoes and garlic.
Spoon hot tomatoes and oil over crusty bread or crostini, drizzle with traditional balsamic.
This is also delicious served over warm pasta.  You can add red pepper flakes and finishing salts for additional taste.
