Ingredients:
2/3 cup butter room temp
1/3 cup peanut butter
1 cup sugar
1 egg
2 tsp vanilla
6 Tbsp. Cocoa
1/2 tsp baking soda
1 tsp kosher salt
1 Tbsp. espresso powder
1 1/4 cup flour
1 10 oz. package Reese's peanut butter chips
Heat oven to 350
Cream together butters and sugar. Add egg and vanilla beat until smooth and light in color. Mix in espresso powder, cocoa, baking soda and salt until incorporated. Gradually add flour. Stir in peanut butter chips. Drop by rounded teaspoons on ungreased cookie sheet. Bake 8 to 10 minutes. Do not over bake cookies will remain soft. Cool slightly, remove from cookie sheet to cooling rack.
