1 and 1/2 lbs. small/baby Yukon potatoes
1 Tbs salt
3 Tbls butter melted
1 tsp salt
Directions:
Place potatoes in small pot with 1 Tbs salt cover with
just enough water to cover. Boil for 15
minutes or more. Boiling time depends on
the size of the potatoes. When potatoes
are fork tender drain in colander and let “dry” for 5 minutes or so. This drying process will help the potatoes crisp
up better. Drizzle baking sheet with
olive oil and sprinkle with kosher salt.
Place potatoes on baking sheet and smash with potato masher or serving
fork. Let potatoes rest/dry for another
5 to 10 minutes again to increase the crisp factor. Drizzle potatoes with melted butter sprinkle with
salt and dried parsley.
Bake at 425 for 20 to 35 minutes
