Lemon Blueberry Power muffins


Ingredients:
1 cups all-purpose flour
1/2 cup oats–quick or regular oats, plain
1/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
5 oz nonfat greek yogurt
1 large egg, lightly beaten
2 tablespoons lemon scented olive oil
1 teaspoon vanilla extract
1 teaspoon lemon juice
3/4 cup fresh blueberries
Directions:
Preheat oven to 350.
Spray muffin tin with cooking spray
Combine flour, sugar, oats, baking powder, baking soda and salt in a bowl.
Combine yogurt, eggs, oil, lemon juice and vanilla in a second bowl.
Fold yogurt mixture into dry mixture; stir to combine completely.
Gently fold in blueberries.
Spoon into muffin tins.
Bake until top is golden and springs back when you gently touch it, 20-25 minutes.
