My Favorite Waffles
Lemon Ricotta Waffles
Makes two generous or four small servings
The picture is waffles with whipped ricotta and fresh blueberries. My family prefers to top them with melted butter and warm maple syrup.
Ingredients:
3/4 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp kosher salt
1 Tbls Lemon sugar *
1/4 cup butter melted
1 large egg
1 tsp vanilla
1 1/2 Tbls fresh lemon juice
1/3 cup milk
1/4 cup ricotta
Directions:
In medium bowl whisk together flour, baking powder, baking soda, lemon sugar and salt. Set aside.
In small bowl or large measuring cup whisk together butter, egg, vanilla, lemon juice, ricotta and milk. I never seem to remember to get things out and let them get to room temp. I often melt the butter 15 seconds or so in the microwave in a large measuring cup, add the milk and zap again for about 20 seconds just to warm the milk enough that the butter stays soft.
Combine the wet and dry ingredients. While your batter rests heat up the waffle iron. Follow the instructions on your waffle iron.
*Lemon sugar is something I keep on hand. If you don't you can use 1/2 Tbls lemon zest and 1 Tbls sugar.
Lemon sugar is 1 part zest to 2 parts sugar. It will keep for months in an air tight container in you pantry.
