Angel food cake
2 cups pitted red cherries
1 tablespoons water
1/4 cup sugar or less (taste your cherries you may not need
very much at all)
1/8 cup cornstarch
1/2 teaspoon lemon juice
pinch salt
whipped creamDirections:
Pit and stem cherries. Place cherries in pot with lemon juice, salt and water. Cook on medium heat just until the cherries start to break down. In a small bowl stir together corn starch and sugar. Pour sugar mixture into cherries, stir until the mixture thickens and becomes glossy. Remove from heat.
Let cherries cool completely.
Tear your angel food cake into bite size pieces. Place one layer of angel food cake into serving dish, layer cherries next then whipped cream. Repeat the layers. Before serving top with additional whipped cream.
