Carpacio
My son was "home".....well he was at our home his home is DC....anyway my son was here for the 4th of July holiday. His last night in town we made a variety of "small" plates to munch and snack while we sat around the table. Carpacio was on the menu. Carpacio is easy peasy and surprisingly everyone in the family likes it. And yes it was served on a paper plate...don't judge me! It was a late in the day meal and no one felt like adding dishes to the pile already in the sink.
Ingredients:
1 8 oz. filet
parmesan to shred
greens (we looked for arugula but there was none to be found at our local grocer so we used a baby greens mix)
horseradish vinaigrette (recipe under odds and ends)
salt to taste
Directions:
Heat grill for 10 to 15 minutes on high heat. Quickly sear (1 to 2 minutes) each side of the steak. Place steak on a plate to rest while you dress your greens. We lightly dressed the greens with the vinaigrette and tossed to coat.
Slice the steak as thin as you can get it...using a mandolin or sharp knife...as you can see from the picture ours was a little thick...did I mention the pile in the sink?????
Arrange the steak on a plate top with the greens shred the parmesan on top and drizzle with a little olive oil or additional vinaigrette.
